I bake a lot, I have been celiac for a long time. I love using Namaste Perfect Flour blend. I highly recommend this flour! I make everything with it, not just baked goods. I found it works better than anything else. You can occasionally purchase it in store at Costco, or I'll order it online. You can find it at Rouses too, but it's pricier. It's my quick cheat, AND it makes a fab roux!
